It’s no secret how much I love eggs. When I was a poor college student, I caught quite a bit of flak from my roommates for my egg consumption. But hey, eggs are cheap, easy, satisfying, and delicious. There are so many ways to prepare them, I’m sure I’ll never get tired of them.
SlowMama just linked to Smitten Kitchen’s shakshuka recipe yesterday, the same day I discovered I had not a lot of time to make a spicy tomato sauce from scratch, but just enough time to dump a small jar of really yummy fresh garlic-roasted tomato sauce into a baking dish along with some marinated feta cheese. I baked it at 350 for 10 minutes, then added two eggs and turned the heat to broil for 3 minutes. Served with some crusty bread, it was the best lunch! Nothing like something warm and savory on a chilly day.

This looks incredible!! And eggs are my go-to meal at least twice a week! My other go to is simple: pasta al dente, butter, parmesan cheese and salt and pepper.

Oh this looks perfect. I want it lo leap out of my phone and onto my plate π I’m obsessed with eggs (I actually worry the kids eat too many). We go through at least 2-3 dozen a week with baking. Our’s aren’t that cheap either at $8 a dozen. James has a few thoughts about my egg politics… But I remind him how much we save skipping out in meat- right?!

Wow this looks delicious. I love making hearty egg dishes in our cast iron so that way we can play around a little with stove top vs oven. Will add this to my next to eat list π

I just adore eggs. Love them so much. I’d eat them the way you have here, or in some other version, but always runny to sop things up with, all the time. But (cue sad trombone). Both my husband and son have a raw egg allergy, so fully cooked it must be. For them at least!
