Most of the time I welcome slow food that requires a lot of my attention. I admit, I enjoy multi-tasking; you will often find me listening to music while doing the dishes in-between loads of laundry and stirring something on the stove, and helping Milo with his homework or running to the couch for a quick snuggle with Oliver. But other days, ugh. I don’t want to deal with food. Maybe it’s because I have to take the boys somewhere in the afternoon, which cuts into dinner time. Or maybe I’m just feeling lazy. Either way, this is one great way to have a hot meal going while you are doing other things. I hope you like it!
Crockpot Chicken Teriyaki
- 2-3 lbs chicken (I used drumsticks and skinless boneless chicken thighs)
- 2 cups pineapple juice
- 1/2 cup tamari (or other soy sauce)
- 2 cloves garlic, minced
- 1-inch piece ginger, minced
Just throw it all into a crock pot together and cook on high for 6 – 8 hours. Remove any bones and shred chicken with fork before serving on rice with pineapple slices or alongside a salad. Enjoy!

I’m cleaning out our chest freezer to prepare for the pasture raised cow the butcher is getting ready for us and I came across a big bag of chicken quarters. This recipe will use them up nicely! Thanks for sharing.
