A while back I came across a blog post on Honest Fare about windowsill sprouting during the winter. An interesting fact that I did not know was that lentils, sprouted after 3-4 days, increase in their fiber content 300%! And while the health benefits of lentils are already amazing, sprouting them seemed like a great way to get some fresh green into our diets during these cold non-garden months. I’ve been popping a handful into my mouth every morning while I rinse the batch, but they are also delicious on salads, or with hummus and thinly sliced red onion in a whole wheat pita.

It is easy to do: Soak 1 cup of dry lentils overnight. In the morning, rinse well under cold water, transfer to a large jar, and cover the top with a bit of cheesecloth held tightly with a rubber band. Rinse daily (or even twice a day) making sure there is no slimy stuff at the bottom of the jar (I did not run into this problem, but I suppose it can happen if you don’t rinse well) and return lentils to jar. Keep in a sunny spot, and watch them grow! It is pretty amazing how they triple in size by the 5th day and start trying to peak out the top! Store in the refrigerator after the 5th day or so to keep them fresh, and enjoy a bit of spring!
