Yummy Stuff: Miso Glazed Cod

Since the weather is no longer conducive to grilling, I have been searching for another good fish recipe that our family can rely on through the winter. Andrew’s grilling skills with fish are pretty amazing, so I’m competing against the impossible, and my boys let me know, ha!

But I think I’ve found my new favorite glaze for white fish: miso, mirin, and sugar. It’s a quick dish, but you can also make the glaze ahead and let the fish marinate for a few hours if you prefer!

Miso Glazed Cod

  • 1 lb cod, cut into 4 or 5 portions
  • 1/4 cup mirin (a Japanese rice cooking wine)
  • 1 Tbsp miso
  • 3 – 4 Tbsp sugar (depending on how sweet you like it)

In a small saucepan, combine mirin, miso, and sugar over low heat. Whisk together until the sugar dissolves. Remove from heat and allow to cool completely. Pour sauce into the bottom of an 8″ x 8″ baking sheet or pan. Place cod fillets in sauce, turning to coat. Allow to marinate for an hour or so, or just pop in the oven.

Bake at 350 for 10 minutes, then turn on broiler at high and cook 2 more minutes, or until the glaze is nicely browned and the inside of the cod is translucent and flakes easily with a fork. Serve with rice and greens. And a little extra sauce on some lacinato kale is perfect, I think!DSC_0010

  2. I love miso fish. It’s one if the very first things I tried when I started eating seafood (occasionally), and I’ll definitely try this for a special occasion!
