Harvesting kale and chard like crazy these days… just in case we hit a deep freeze and lose a bunch. Also, keeping it nicely trimmed up keeps it healthy and growing (tip: always take the leaves from the bottom of the stalk, trimming off any hole-ridden or damaged leaves as you go- you can take everything but the top four leaves, and it will keep on growing as long as it’s getting plenty of water and sunshine).Eating kale in raw salads or sautéed and kale chips with sesame oil; eating chard as gratin, in white bean soup, and in quiche.

We’ve got so much gorgeous kale in our garden this fall too. My son is a very picky eater and generally the only way he’ll eat his veggies is if we sneak them into foods he likes. With the kale, I fill the blender up 3/4 full and blend it up with organic apple juice. Then add 1 banana, plain greek yogurt, brown rice protein powder, and frozen fruit. Nice snack any time of day.
