How We’ve Been Eating

DSC_0007With summer comes a new way of eating. I certainly spend less time in the kitchen with the oven or stove on, and the bounty of garden and farmer’s markets makes it possible to eat fresh (and cold!) foods as much as possible. Of course, we’ve been grilling out a lot (mostly fish, but when we have company, Andrew makes fall-off-the-bone ribs which are out of this world).

Above is a dinner we recently enjoyed. Prosciutto, artisan salami, fresh mozzarella, aged cheddar, marinated tomatoes, and a big pile of fresh baby greens. Add to this a sliced baguette and some dijon mustard, and you’re set! Andrew and I ate almost all of the above ourselves, with the boys nibbling here and there (we made them a separate meal for this one).

Another good idea: fresh corn off the cob with parsley from our garden; grilled lobster tails, and kale caesar salad (nope, still not tired of that one!)

Our garden is coming along nicely (more on that tomorrow!). We can’t wait to add to our cold plate cucumbers, beans, and several varieties of tomatoes and squash that are currently ripening on the vine! How are you eating this summer?

  1. We have Swiss chard that’s ready, so we’ve been eating that in quiches and spring rolls. I also got some gorgeous cabbage from a local farmer. I chop that up, mix it with an Asian dressing, and add some cold chicken for a salad the whole family will eat.

  2. RIBS! I have a recent fascination and intense love for ribs. Why are they so ridiculously good?

    We do a lot of salads in the summer months. I’d like to say that our garden supplies most of our food, but this year has been weird and all the plant growth seems to be really stunted, and the only thing going crazy are the potatoes. I was so looking forward to swiss chard and kale, too.

  3. Yum! Normally I like to try to eat from the garden as much as possible, adding grains and beans and the occasional fish. This summer… oh it’s so sad. We have so much growing that we can’t even keep up with, now I can’t do any cooking. Looking forward to late summer tomatoes and hopefully being on my feet 🙂

  4. That’s my favorite type of food to eat in the summer! So easy and fresh. I have to admit though, I’m ready for fall and the food that comes with it!
