Yummy Stuff: Kale Caesar Salad with Grilled Chicken

I wish I had thought of this recipe. But even though it is nowhere near my own to claim, I had to share it with you, in case you missed it on A Cup of Jo‘s blog. We served a version of this (I added 2 more anchovies and used 1 1/2 lemons instead of 1, and only baked my breadcrumbs for 3 minutes) when we had massive amounts of people at our house a few weekends ago, and every last bit was eaten by the end of the event, with several people asking for the recipe and one even calling me later for it! It’s that good. And if you save the dressing and bread crumbs separately, you can eat the leftovers with just as much success the next day.

Andrew and I add grilled chicken and plenty of grated parmesan for an easy dinner. Plus, with the amount of lacinato kale coming up in our garden, I think we’ll be set for the summer with this amazing meal! Check out the original recipe here. Print it out- it’s a keeper!

  1. And just yesterday I was blogging about needing more ideas for using up all my kale! I had forgotten about this recipe but will definitely have to save it for later. Looks delicious!
