I’ve never been much of a breakfast person. Unless you count brunch, and then I’m in– bring on the french toast, eggs benedict (or eggs anything, for that matter), crepes, you name it. But when it’s early and I need to eat something before rushing off for the morning, this has been on rotation.
Greek yogurt (this brand: Greek Gods, honey), fresh strawberries, and a tablespoon of ground chia seeds. It’s sweet enough, and very filling, chock full of protein (chia seeds are an amazing super food: full of essential fatty acids which most of us do not get enough of- check out benefits of chia seeds here). Chia seeds are basically tasteless, and when ground into a powder, the nutrients are easier for your body to absorb. The bit of fat from the yogurt satiates me and helps me feel full a lot longer.
Are you a breakfast person? My other go-to is really simple and really good: smashed avocado on a piece of toast with sea salt sprinkled on top. Soooo good! What’s for breakfast at your house?
We sprinkle chia seeds on our overnight refrigerator oatmeal for breakfast sometimes. But lately for breakfast, I’ve been making big patches of different kinds of pancakes and freezing them so we can just pull them out. This morning we had coconut pancakes. Deee-licious.
I’m a fan of breakfast, but it’s taken me a while to find a healthy and portable option.
For the kids, I’ve been making & freezing pancakes with ricotta cheese and mashed sweet potatoes inside. They taste so good, and I feel like the add-ins make the box mix a little healthier. Plus, they have so much flavor, they only need a little bit of syrup.
For me, I make slow cooker steel cut oatmeal with apples once a week. It goes into small containers and is the perfect size to take to work. Add a little milk and honey – perfect!
Lauren, I discovered Greek Gods (honey) a couple months ago and I LOVE it! This is my breakfast too except I rotate in raw oats. Have a great Tuesday!
Yummy! You know I’ve never had chia seeds I don’t think- I’ll have to give them a try. I love yogurt (Wyatt is on an off phase with it though). I also can’t really eat a big breakfast first thing in the morning, but breakfast food is some of my favorite. Breakfast for dinner even works!
Dude. We are breakfast twins. I often have what my kids call “avo toast” and the yogurt/chia/berry mixup. Cereal doesn’t appeal to me at all. We also do a Mexican breakfast with rice, fried eggs on top, salsa, and avocado.
I’m right there with you and the avocado toast! I’ve never done cya seeds in anything other than pizza crust or smoothies. I need to try it! I really want to make chia seed pudding. Have you tried it?

Oh my gosh. You might judge me if you hear what I eat for breakfast! 😉 It’s a tossup between freezer waffles, toaster pastries (yes, with the glaze icing), kiddie cereal or (my fave) SONIC! 🙂 I am such a junk food lover. It’s awful. I blame it on my mom for depriving me of it for too many years.
i’m not a breakfast person at all. if i have one it’s typically a green smoothie or half an avocado with salt. not too exciting 😀 your yummy strawberry bowl looks pretty good though!

Having a little one that demands food the second his eyes open in the morning has forced me to be a breakfast person. At first I wasn’t so thrilled to be whipping up something that quick after waking up (I’ve always been a take my time, brunch-y kind of gal), but after finding some good, quick recipes to keep in rotation it’s become a joy. We are regularly rotating pudla (chickpea savory pancakes) and egg hash (find Bittman’s version- it’s divine) right now. I am so ready for spring though – with fresh fruit comes so many more breakfast options!
I love the chia seeds idea! I’ve done that before with coconut and flax, but I’ll have to try chia.
Since I don’t eat grains, for breakfast I’ll often have peanut butter and banana (same as Rho – ha), acorn or butternut squash with pecans or even a nut butter again (I make it earlier in the week and then warm it up), or an avocado plain with salt and pepper OR with Organic Valley cottage cheese. If you like cottage cheese and have not tried it with avocado, you really should. Amazing.
Same here. I love breakfast, and actually NEED it daily, but I can’t just roll out of bed and eat normal breakfast food. Especially eggs. They make me sick if I eat them right away. So my go-to breakfasts are…
1- oatmeal with maple syrup, milk, butter, and golden raisins
2- plain yogurt with maple syrup and muesli or walnuts

This is my kind of breakfast! I’m never hungry first thing in the morning, but I make myself eat something and it’s usually something like this or a yogurt smoothie 🙂
