Chocolate Peanut Butter Cup Cookies

Not that the world needs yet another cookie recipe, but might the world want one? Well, here is a good one, adapted from All Recipes Tried & True Cookies; top 200 recipes. What we like about them is that you can substitute for natural peanut butter and they still turn out chewy and amazing. And they are the kind of cookies that stay chewy the next day (if they make it that long). Bonus.

Chocolate Peanut Butter Cup Cookies

Ingredients:

  • 1 cup butter, softened
  • 3/4 cup creamy peanut butter (I used natural to cut down on sugar)
  • 3/4 cup white sugar
  • 3/4 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 1/3 cups all-purpose flour
  • 1/3 cup cocoa powder
  • 1 teaspoon baking soda
  • 1 cup semisweet chocolate chips
  • 1 cup peanut butter chips
  • 1 small package mini peanut butter cups, cut in half

Directions:

  1. Preheat oven to 350
  2. In a large bowl, cream together butter, peanut butter, white sugar, and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Combine the flour, cocoa, and baking soda; stir into the peanut butter mixture. Mix in the chocolate chips, peanut butter chips, and peanut butter cups. Drop by tablespoonfuls onto ungreased cookie sheet (I used a Silpat).
  3. Bake for 8 to 10 minutes in preheated oven. Let cool for 1 to 2 minutes on sheet before removing, or they will fall apart.

Enjoy with a large glass of 100% grass-fed whole milk! (No, I’m not kidding. I swear you can taste the difference. And it is so much better for Mother Earth too!)

In other news, we adapted another recipe. This time a kid-friendly Sink or Float game is adapted into a snow game after Andrew placed the container outside a couple of nights ago. Simply bring snow inside, expect a mess, and have fun.

After they started complaining of frozen hands, we had a blast adding hot water and observing what happened to the snow (we talked about icebergs, etc.) before it completely melted. A great way to play in the snow without… you know, playing in the snow.

    We did this activity yesterday afternoon when the snow was still new here – now its kind of melted. We used colored water in squirt bottles for extra fun. I wish we would have used hot water – what a great idea. Daniel kept his gloves and winter hat on most of the time and requested cocoa after!
