My favorite egg sandwich is this: one soft scrambled egg with herb boursin mixed in, topped with one over-easy egg, all on a toasted everything bagel smothered with more herb boursin. Is there anything this cheese spread doesn’t taste good on?
Sounds awesome, I miss bagels a lot. (We don’t have them here, or really eat gluten. Sigh.) What’s herb boursin? Is it something you buy or make yourself?
Milla, life without bagels is like life without air! And herb boursin is a kind of cheese spread. The best way I can describe it is a mix between cream cheese and goat cheese, plus herbs & garlic. It’s good on practically anything!
Eggs and bagels are in my belly at least a few times a week- this looks delish! My cousin once made mashed potatoes with an entire container of boursin and it was insane- sooo good 🙂
Ha, Andrea! I know, it happened by accident at first when I broke the yoke of a fried egg, but once I discovered how it worked, I have been breaking the yoke of one and frying the other over easy. The trick is to scramble it quickly and keep moving it around the pan so it stays nice and soft. Perfection!
An update! I made these for breakfast this weekend, and they were great. In Frank’s words, boursin + eggs is a revelation. He’s not totally sold on the necessity for an over-easy egg and a scrambled egg and has requested just scrambled for the future, but I enjoyed the messy glory of yolk dripping over everything.
But man…boursin + everything bagel + coffee = some terrible dragon breath, for sure.
